You can’t have a proper New England summer without consuming at least one, and that’s if you’re just visiting. I’ve gone to great lengths to determine what makes, in my opinion, the perfect roll. From the meat to bun ratio, to exactly how much mayo, if you’re getting fancy, you should use per ounce of meat.
I’m a purist. I believe the only acceptable ingredients, other than the lobster, would be a VERY light touch of mayo or some warm drawn butter. You can keep your lemon zest, capers, and tarragon – the worst offense to a lobster roll. This is lobster country, and here we eat lobster!
I take pride in my lobster rolls, and I’ve seen too many tourists, and even New Englanders, shell out $18 for something that has more mayonnaise than lobster sitting on top of flabby green lettuce jammed into a high fructose corn syrup bun. I’m lookin’ at you Pepperidge Farm.
